Specially made copper pans, pots and cauldrons still are and will be the sine qua non for many of the most remarkable dishes of the Traditional Turkish Cuisine such as the “Kavurma”, the “Perde Pilavı”, the “Sahanda Yumurta”, the “Menemen”, the “Muhlama / Kuymak” the “Tas Kebabı” or the “Kuru Fasülye”.

 

When we decided to explore the wider world of traditional gastronomy, we saw that just like in our home Turkey, many places around the world have some very specific copper cookware designed for their own traditional dishes.

 

Hence we, at Soy, have undertaken the enterprise to perfectly recreate region-specific speciality copperware from all around the globe.

Deep Baking Pan | The YHT

Deep Baking Pan | The YHT an oven-going deep pan is the best tool on the market to perform deep-dish pastry baking; Milan / Chicago pan pizzas or any börek will be made in a whim with the perfect crust. Suited both for stovetop and oven baking.

The product is entirely cold-forged by hand from a 2mm solid copper sheet, and has no weldings or dead-corners, unlike its French, Italian or Belgian counterparts.

NO machines are involved in the process.

Because the product seamless and possesses no welding or brazing whatsoever, it will NEVER leak, even after 100+ years of reckless and heavy-duty use.

Crêpe Pan | The OCT

Product Dimensions: 24 CM | 25 CM | 30 CM

Crêpe Pan | The OCT pans are the best possible crêpe pans in the World, as we know them. Their solid 2.5mm copper mass and silver lining are perfect heat conductors that will give you ultimate control over your crêpe making.

It also makes perfect omelettes, mücvers and other kinds of 'Rajesh. The ideal balance of the pan makes it very easy to flip anything, for the accustomed. Their 999 carat Silver Lining makes them able to withstand very high temperatures with ease, unlike their Western-European counterparts, that delaminate (and are lost forever) after roughly 290°C. Without forgetting to mention, as the OCT are quasi-flat, you'll make a mean steak, as if it was on an actual Silver Plancha (or Teppanyaki / Griddle, you name it!).                        

They are as good for the professional as well as the enthusiast. All work is entirely done by hand and hammer cold-forging. No press or even spinning is involved.

Sahan | The NS

Sahan | The NS is a state of the art 100% handmade and very versatile Soy NS Series Copper Sahans for cooking and serving are more than ideal for gently frying your eggs with sucuk, kavurma, pastırma or bacon prior to serving them directly on the table, or any breakfast or side dish that needs a more than spectacular presentation following the perfect cooking.

They are the most important component of the traditional Turkish breakfast, and also are prominently used in the cuisines of all neighbours of Turkey for the same reasons.

Any household will have a few of these, and, as they are also oven going, they will also make great personal-sized roasting pans.

Cooking & Service Sahans | The YKS

Product Dimensions: 16 CM | 20 CM | 24 CM | 28 CM

Cooking & Service Sahans | The YKS Dome-Lidded Sahans are one of the most important showcases of the Soy craftsmanship and dedication to quality.

The Base pan consists of a solid hand-hammered 2mm pan, that can withstand heavy-duty cooking while the lid is a heavy-gauge 1.5mm dome, that perfectly distributes the heat inside the pan, just like an oven would do.

This domed pan is the sine-qua-non for some of the slow-cooked Turkish and Middle-Eastern specialities, like the Tas Kebabı (if having the required Tas piece of cookware), or for serving meat dishes at the ideal temperature.

Their build actually tells about their function.

As the whole product is built from Solid Copper, the heat that is received from the bottom is circulated to the top, acting as a hemispheric dry convection oven, that in turn locks the flavour of the ingredients, giving a perfect finish to all food cooked in it, without ever needing to turn anything (unlike a Tagine where the top stays cool thus creating a microclimate, the Sahan transmits the heat from the top -in a parabolic fashion- as well, and the result one would get will be a perfect roast, not a braising).

Once the cooking is over, the Sahans will also look gorgeous on your tabletop! 

The larger sizes, such as the YKS24 and the 28 can accommodate an entire chicken or duck.

The handle topping the dome is wax-cast bronze with a perfect finish.

All hammering is entirely done by hand, no press or even spinning is involved.

Fish Kettle | The BBT

Fish Kettle | The BBT is the best fish kettle on the planet - period. The product is ENTIRELY cold-forged by hand from a 2mm solid copper sheet, and has no weldings or dead-corners. No machines are involved in the process.  

Because the product is seamless and possesses no welding or brazing whatsoever, it will never leak, even after years of reckless and heavy-duty use. It is tin lined by hand, which can last a lifetime, if properly taken care of.  

It takes our craftsmen three full working days to form each kettle, regardless of the size.  A removable perforated tray hand forged from 1.5mm solid copper comes with the poacher.

Mussel Steamer | The MT

The Soy MT16 and MT20 Mussel Kettles are the ideal tool to fix perfectly well a number of Mussel dishes, such as the "Moules Marinières" of Belgium / Flanders, the Moules au Safran of Lille / Rijsel, Moules à la Provençale or even the Midye Dolma of Western Turkey.
